Ingredients: 1/4 to 1/2 pound baby romaine lettuce 1 cup grape tomatoes, sliced in half 1/2 cup raisins 1 Fuji apple (or other crisp apple), finely chopped 3 tbsp scallions, chopped 2 tbsp chives, chopped 1 yellow or orange bell pepper, chopped 1/2 English cucumber, chopped 1/4 cup packed fresh basil
Dressing Ingredients: 2 cups fresh lemon juice 3 whole cloves garlic 3 tbsp minced ginger 3 tbsp Nama Shoyu soy sauce 3 heaping tbsp raw honey (or more if desired) 1 1/2 cup cold-pressed olive oil
- Place all of the ingredients except the oil in blender. Begin blending at normal speed. As the mixture is blending, slowly add the oil until it’s completely blended. This recipe should last over a week in the fridge.
Preparation: Mix all of the ingredients in a salad bowl. Toss and serve with dressing.
